- Pound chicken to 1/2 inch thickness, season with salt and pepper, and sear in 1 tbsp olive oil over medium-high heat until golden and 165°F, about 4 to 5 minutes per side. Rest on a cutting board.
- Whisk together the mayonnaise, garlic, anchovy paste, Dijon, lemon juice, grated Parmesan, and 2 tbsp olive oil until smooth. Season with salt and pepper.
- Toss the sliced romaine with 2 to 3 tbsp of the dressing until lightly coated.
- Brush the cut sides of the buns with olive oil and toast in the skillet until golden, 1 to 2 minutes.
- Slice the chicken against the grain. Spread extra dressing on the bun bottoms, layer chicken, dressed romaine, and shaved Parmesan, then cap with the bun top. Serve right away.
Notes
This sandwich is best eaten as soon as it’s assembled while the bun is warm and toasty and the romaine is cool and crisp. For make-ahead meals, store all components separately and assemble just before eating.
