- In a small bowl, stir together the ketchup, mustard, 1 tbsp of the mayonnaise, the pickle relish, white vinegar, a pinch of smoked paprika, and salt and pepper until smooth.
- In a separate bowl, gently mix the ground chicken with the remaining 2 tbsp mayo, garlic powder, onion powder, smoked paprika, and a good pinch of salt and pepper. Form into 4 equal patties, about 1/2 inch thick. Heat the oil in a large nonstick skillet over medium-high heat. Cook the patties for 3-4 minutes per side, until golden and the internal temperature reaches 165°F.
- Divide the lettuce among four bowls. Top with tomatoes, pickle slices, red onion, and cheddar. Place a hot chicken patty in each bowl.
- Drizzle the special sauce over the patties and serve immediately.
Notes
If you are meal prepping, keep the sauce and chicken separate from the fresh toppings until the moment you eat. The chicken patties can be made a day ahead and reheated gently.
