Chicken Breast Tacos Recipe

Ingredients
  

  • 1 1/2 lb boneless skinless chicken breasts, trimmed and sliced into 1/2-inch strips
  • 2 tbsp olive oil, plus a little extra for the pan
  • 3 tbsp fresh lime juice
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1 cup shredded green cabbage
  • 1/2 cup shredded red cabbage
  • 3 tbsp plain Greek yogurt or sour cream
  • 2 tbsp chopped fresh cilantro, plus more for serving
  • 8 small flour or corn tortillas, warmed
  • 1 avocado, sliced

Method
 

  1. In a bowl, mix olive oil, 2 tbsp lime juice, cumin, chili powder, smoked paprika, garlic powder, and salt. Pat the chicken strips dry and toss to coat.
  2. Heat a large oiled skillet over medium-high heat. Add the chicken in a single layer and sear for about 4 minutes, then flip and cook another 3 to 5 minutes until browned and cooked through (165°F).
  3. While the chicken cooks, combine cabbages, Greek yogurt, remaining 1 tbsp lime juice, cilantro, and a pinch of salt to make the slaw.
  4. Fill each warm tortilla with chicken, slaw, avocado slices, and extra cilantro. Serve right away.

Notes

If you plan to make these ahead, keep the chicken and slaw separate and warm the chicken gently before serving. The slaw will stay crisp for a few hours but gets softer overnight.
