Ingredients
  

  • 12 oz chicken apple sausage, sliced into 1/2-inch rounds
  • 1 large sweet potato, peeled and cut into 1/2-inch cubes
  • 1 lb Brussels sprouts, trimmed and halved
  • 1 medium red onion, cut into 1-inch wedges
  • 1 Honeycrisp apple, cored and sliced into 1/2-inch wedges
  • 2 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 2 tbsp pure maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp olive oil

Method
 

  1. Preheat oven to 425°F (220°C). Toss sweet potato, Brussels sprouts, red onion, apple, and sausage with 2 tbsp olive oil, salt, and pepper. Spread on a large rimmed baking sheet in a single layer.
  2. Roast for 20 minutes, flipping halfway, until sweet potatoes are tender and Brussels sprouts are charred.
  3. Whisk maple syrup, Dijon mustard, and 1 tbsp olive oil. Drizzle over the pan, toss to coat, and broil for 3 to 5 minutes until the glaze bubbles and everything looks sticky and caramelized.
  4. Let the pan rest for a minute, then serve warm, spooning any extra glaze from the pan over the top.

Notes

Chicken apple sausage is fully cooked, so you’re mainly heating it through here. If you swap in an uncooked sausage, cook it to an internal temp of 165°F before adding the glaze. A heavy-duty baking sheet will handle the broiler better than a thin one. The apple slices will soften quickly, so pull the pan as soon as the glaze caramelizes.
