Method
- Season chicken with salt and pepper. In a large pot over medium-high heat, melt 1 tablespoon butter and brown the chicken until cooked through, about 8 minutes total. Transfer to a plate.
- Add remaining butter to the pot, then sauté onion and garlic until soft. Stir in flour and cook for 1 minute.
- Gradually whisk in broth, 1/4 cup cream, thyme, salt, and pepper. Bring to a boil, add noodles, reduce heat, and simmer until tender, about 8 minutes.
- Remove from heat and stir in remaining cream, parsley, and the cooked chicken. Serve immediately with more pepper on top.
Notes
The sauce continues to thicken off the heat, so if you’re holding dinner for a few minutes, keep a little extra warm broth nearby to loosen things up. Leftovers reheat well with a splash of liquid.
