- Heat olive oil in a large skillet over medium-high. Add onion and cook 3 minutes until softened. Add ground chicken and break it apart, cooking 5–6 minutes until no pink remains. Stir in garlic and cook 30 seconds.
- Lower heat to medium, pour in Alfredo sauce, Italian seasoning, salt, and pepper. Stir well and simmer 3–4 minutes until the mixture thickens slightly.
- Toast buns under the broiler or in a dry skillet for 1–2 minutes until the cut sides are golden.
- Spoon the hot chicken mixture onto toasted bottom buns, top with parsley if using, close with the top bun, and serve immediately.
Notes
If you like a little heat, add a pinch of red pepper flakes with the Italian seasoning. The filling can be made ahead and refrigerated; reheat it over low heat with a splash of milk to keep it creamy.
