- Boil a large pot of salted water and cook penne al dente. Reserve 1 cup pasta water before draining.
- Season chicken with salt and pepper. Melt 1 tbsp butter in a skillet over medium-high. Sear chicken 5 to 6 minutes per side until golden and 165°F (74°C). Remove and rest.
- In the same skillet over medium heat, melt remaining butter and cook garlic 30 seconds. Add cream, bring to a simmer, then reduce heat and whisk in Parmesan until smooth.
- Slice chicken. Toss drained penne in the sauce, fold in chicken, and serve with parsley.
Notes
Let the chicken rest at least 5 minutes before slicing. If the sauce thickens too much after adding the pasta, stir in a splash of reserved pasta water until it reaches the consistency you like.
