Ingredients

  • 12 oz dry elbow macaroni
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 (12 oz) can evaporated milk
  • 1 tsp granulated sugar
  • ½ tsp fine sea salt
  • ¼ tsp black pepper
  • ¼ tsp paprika
  • 2 cups shredded sharp cheddar cheese
  • 4 oz sliced American cheese, torn into pieces

Method

  1. Cook the macaroni in salted boiling water for about 7 minutes, until just al dente. Drain and set aside.
  2. In the same pot, melt butter over medium heat. Whisk in flour and cook 1 minute. Slowly whisk in whole milk and evaporated milk, then add sugar, salt, pepper, and paprika. Cook, whisking constantly, until thickened, 5 to 6 minutes.
  3. Reduce heat to low. Add cheddar and American cheeses in handfuls, stirring until each addition melts completely, about 2 to 3 minutes.
  4. Fold in the cooked pasta and warm through for 1 to 2 minutes. Serve immediately.

Notes

This sauce is at its creamiest right off the stove. If you need to hold it, keep the pot over very low heat and stir in a little extra milk before serving. Do not use sweetened condensed milk in place of evaporated milk; they are not the same thing.
