Ingredients

  • 2 tbsp unsalted butter
  • 1 medium yellow onion, diced small
  • 3 celery ribs, sliced 1/4 inch thick
  • 3 medium carrots, sliced into thin rounds
  • 3 garlic cloves, minced
  • 1/4 cup all-purpose flour
  • 8 cups low-sodium chicken broth
  • 2 cups shredded cooked chicken
  • 8 oz wide egg noodles
  • 1/2 cup heavy cream
  • 1 bay leaf
  • Salt and black pepper
  • 2 tbsp chopped fresh parsley, plus more for serving

Method

  1. Melt butter in a large Dutch oven over medium heat. Add onion, carrots, and celery and cook 5 minutes until softened. Add garlic and cook 30 seconds. Sprinkle flour over vegetables, stir constantly 1 minute.
  2. Pour in chicken broth, add shredded chicken, bay leaf, 1/2 teaspoon salt, and pepper. Bring to a boil, then lower heat and simmer uncovered 15 minutes.
  3. Stir egg noodles into the soup and cook until tender, 6 to 8 minutes, stirring occasionally.
  4. Remove from heat, discard bay leaf. Stir in heavy cream and parsley. Adjust seasoning to taste. Ladle into bowls and top with extra parsley and pepper.

Notes

Egg noodles keep soaking up liquid as the soup sits, so if you’re planning for leftovers, cook them separately and add to each bowl when serving. The soup tastes even better the next day once the flavors settle.
