Chia Seed Pudding Recipe

Ingredients
  

  • 1/4 cup chia seeds
  • 1 cup unsweetened almond milk
  • 1 to 2 tbsp pure maple syrup
  • Pinch of fine sea salt

Method
 

  1. Whisk the almond milk, chia seeds, maple syrup, and salt together in a bowl for about 2 minutes to evenly suspend the seeds. Let the mixture rest on the counter for 10 minutes.
  2. Whisk again for 30 seconds to break up any seeds that are starting to clump. Pour into a jar or two small jars, cover, and refrigerate for at least 2 hours, preferably overnight.
  3. Give the chilled pudding a quick stir, spoon into bowls, and add your favorite toppings. Serve cold.

Notes

The active time is just a few minutes of whisking. The pudding needs at least 2 hours in the fridge to set, overnight gives the creamiest texture. Stir once more after the first 30 minutes of chilling if you remember, but it is not essential.
