Chewy Vegan Oatmeal Chocolate Chip Cookies Recipe

Ingredients
  

  • 1/2 cup vegan butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 flax egg (1 tbsp ground flaxseed + 2.5 tbsp water, set to gel)
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 1/2 cups rolled oats
  • 1/2 tsp baking soda
  • 1/2 tsp fine sea salt
  • 1 cup vegan dark chocolate chips

Method
 

  1. Cream the vegan butter and both sugars with an electric mixer on medium speed until light and fluffy, about 2 minutes. Scrape the bowl.
  2. Add the flax egg and vanilla, beat until glossy, about 1 minute.
  3. Whisk the flour, baking soda, and salt together. Add the dry mix and oats to the wet mixture, folding just until combined. Stir in the chocolate chips.
  4. Preheat oven to 350°F (175°C). Scoop dough into 2-tbsp mounds on parchment-lined sheets, spacing 2 inches apart. Bake one sheet at a time for 10 to 12 minutes, until edges are set and centers look soft.
  5. Let cookies rest on the hot sheet for 5 minutes, then transfer to a rack. Serve warm or at room temperature.

Notes

For thicker cookies, chill the scooped dough on the baking sheet for 30 minutes before baking. Store baked cookies airtight for up to 5 days; freeze dough balls for later baking.
