- Cream the vegan butter and both sugars with an electric mixer on medium speed until light and fluffy, about 2 minutes. Scrape the bowl.
- Add the flax egg and vanilla, beat until glossy, about 1 minute.
- Whisk the flour, baking soda, and salt together. Add the dry mix and oats to the wet mixture, folding just until combined. Stir in the chocolate chips.
- Preheat oven to 350°F (175°C). Scoop dough into 2-tbsp mounds on parchment-lined sheets, spacing 2 inches apart. Bake one sheet at a time for 10 to 12 minutes, until edges are set and centers look soft.
- Let cookies rest on the hot sheet for 5 minutes, then transfer to a rack. Serve warm or at room temperature.
Notes
For thicker cookies, chill the scooped dough on the baking sheet for 30 minutes before baking. Store baked cookies airtight for up to 5 days; freeze dough balls for later baking.
