Method
- Cream the butter and sugar until light and fluffy, then mix in the egg, vanilla, and sourdough discard.
- Whisk the flour, baking powder, and salt, then add to the wet mixture in two batches, mixing just until combined.
- Shape the dough into a disc, wrap, and chill for at least 2 hours.
- Roll the dough 1/4 inch thick between parchment sheets, cut shapes, and place on lined baking sheets.
- Bake at 350°F for 9 to 11 minutes until edges are golden, then cool on a wire rack.
- Stir together powdered sugar, vanilla, and milk to make an icing, spread over cooled cookies, and let set.
Notes
Chilling time is not included in the prep time. The dough needs at least 2 hours in the fridge, but you can chill it up to 2 days ahead. When re-rolling scraps, handle the dough as little as possible for the softest cookies.
