Ingredients

  • 2 cups old-fashioned rolled oats
  • 1/2 cup pumpkin puree
  • 1/3 cup maple syrup
  • 1/4 cup almond butter
  • 1/4 cup mini dark chocolate chips
  • 2 tbsp chia seeds
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract
  • 1/4 tsp fine sea salt

Method

  1. Preheat oven to 350°F (175°C) and line an 8-inch square pan with parchment. In a large bowl, whisk together pumpkin puree, maple syrup, almond butter, vanilla, and salt until smooth.
  2. Add oats, chia seeds, pumpkin pie spice, and chocolate chips. Fold with a spatula until evenly combined and no dry oats remain.
  3. Transfer to the pan and press into an even layer very firmly, using your hands or the back of a spatula. Sprinkle extra chocolate chips on top and press them in.
  4. Bake for 25 to 28 minutes, until edges are golden and top is set. Let bars cool completely in the pan on a wire rack.
  5. Lift the cooled block out with the parchment overhang, place on a cutting board, and slice into 8 bars.

Notes

These bars need to cool all the way down before slicing, or they will crumble. The wait is about 30 minutes on the counter. Wrapped individually, they make a great grab-and-go snack.
