- Cream the butter, brown sugar, and granulated sugar until light and fluffy, about 2 to 3 minutes.
- Beat in the eggs one at a time, then the vanilla, until smooth.
- Whisk the flour, baking soda, and salt together in a small bowl, then stir into the butter mixture just until combined.
- Fold in the oats and walnuts until evenly mixed.
- Scoop tablespoonfuls of dough onto parchment-lined baking sheets and bake at 350°F (175°C) for 10 to 12 minutes, until edges are golden.
- Let the cookies cool on the baking sheet for 5 minutes, then move to a wire rack to cool completely.
Notes
Toasting the walnuts first adds a much deeper flavor. Spread them on a sheet pan and toast at 350°F (175°C) for 5 to 7 minutes, then cool before mixing into the dough.
