Method
- Beat butter, brown sugar, and granulated sugar until pale and fluffy, about 2 minutes.
- Mix in egg and vanilla until just combined, about 30 seconds.
- Add flour, baking soda, and salt. Stir on low until a soft dough forms and no dry flour remains.
- Fold in chocolate chips and Mini Eggs (chopping half if you like). Cover and chill the dough for at least 30 minutes.
- Preheat oven to 350°F (180°C). Scoop 3‑tablespoon mounds onto a parchment‑lined sheet, press extra Mini Eggs on top, and bake 10 to 12 minutes until edges are golden and centers are just set. Cool on the sheet 5 minutes, then transfer to a wire rack.
Notes
The 30‑minute chill is not included in the prep time, but it makes a big difference. If you want a stronger caramel flavor, let the dough rest overnight in the fridge.
