Chewy Mini Egg Cookies Recipe

Ingredients
  

  • 1/2 cup unsalted butter, softened
  • 1/2 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all‑purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp fine sea salt
  • 1/2 cup dark chocolate chips (optional)
  • 1 1/2 cups Cadbury Mini Eggs

Method
 

  1. Beat butter, brown sugar, and granulated sugar until pale and fluffy, about 2 minutes.
  2. Mix in egg and vanilla until just combined, about 30 seconds.
  3. Add flour, baking soda, and salt. Stir on low until a soft dough forms and no dry flour remains.
  4. Fold in chocolate chips and Mini Eggs (chopping half if you like). Cover and chill the dough for at least 30 minutes.
  5. Preheat oven to 350°F (180°C). Scoop 3‑tablespoon mounds onto a parchment‑lined sheet, press extra Mini Eggs on top, and bake 10 to 12 minutes until edges are golden and centers are just set. Cool on the sheet 5 minutes, then transfer to a wire rack.

Notes

The 30‑minute chill is not included in the prep time, but it makes a big difference. If you want a stronger caramel flavor, let the dough rest overnight in the fridge.
