Chewy High Altitude Chocolate Chip Cookies Recipe

Ingredients
  

  • 2 1/2 cups (300g) all-purpose flour
  • 1/2 tsp baking soda
  • 1 tsp fine sea salt
  • 3/4 cup (170g) unsalted butter, softened
  • 3/4 cup (150g) granulated sugar
  • 3/4 cup (160g) packed light brown sugar
  • 1 large egg plus 1 egg yolk
  • 2 tsp vanilla extract
  • 2 tbsp whole milk
  • 2 cups (340g) semisweet chocolate chips
  • Flaky sea salt, for topping

Method
 

  1. Beat butter and both sugars on medium speed 2–3 minutes until fluffy and pale.
  2. Mix in egg, egg yolk, milk, and vanilla until smooth.
  3. Add flour, baking soda, and salt; mix on low just until combined. Fold in chocolate chips.
  4. Scoop onto parchment-lined sheets, bake at 375°F for 10–12 minutes, cool 2 minutes, then slide onto a rack and sprinkle with salt.

Notes

Chilling the shaped dough for 30 minutes helps if your kitchen is warm. A kitchen scale gives the most reliable results. Store cooled cookies in an airtight container for up to 5 days.
