- Beat the butter, granulated sugar, and brown sugar until light and fluffy, about 2 to 3 minutes.
- Beat in the egg and vanilla until smooth, about 1 minute.
- Mix in the flour, baking soda, and salt just until no dry streaks remain.
- Fold in the dried cranberries and white chocolate chips until evenly distributed.
- Preheat oven to 350°F (180°C). Scoop 1½-tablespoon mounds of dough onto parchment-lined baking sheets, spacing them 2 inches apart. Bake for 10 to 12 minutes until edges are golden and centers are puffy. Cool on the sheet for 5 minutes, then transfer to a wire rack. Serve warm.
Notes
If your kitchen is warm and the dough feels sticky, chill the bowl for 15 minutes before scooping. The cookies will keep their thick shape better that way. For a bakery-style look, press a few extra white chocolate chips and cranberries onto the tops of the dough balls right before they go in the oven.
