- Beat butter, granulated sugar, and brown sugar on medium speed until light and fluffy, about 2 minutes.
- Add egg, egg yolk, and vanilla and beat on low just until combined, about 30 seconds.
- Whisk flour, baking soda, and salt together, then stir into the wet ingredients until no dry spots remain.
- Fold chocolate chips and walnuts into the dough with a spatula until evenly distributed.
- Heat oven to 375°F, scoop rounded tablespoonfuls of dough onto parchment-lined sheets, and bake 10 to 12 minutes until edges are golden and centers look slightly underdone.
- Sprinkle hot cookies with flaky salt if desired, let rest 5 minutes on the sheet, then move to a wire rack.
Notes
If the dough feels too soft to scoop, pop the bowl in the fridge for 15 minutes. For even thicker cookies, chill the portioned dough balls before baking. This dough bakes well straight from frozen, just add a couple of minutes to the bake time.
