- Mix the 1/4 cup brown sugar, 1 tbsp cinnamon, and 2 tbsp melted butter in a small bowl into a wet paste; set aside.
- Beat the 1 cup butter and 1 cup brown sugar with a hand mixer until light, about 2 minutes. Add the egg and 2 tsp vanilla, beating until combined.
- Whisk the 2 1/4 cups flour, baking soda, salt, and 1 tsp cinnamon together, then stir into the butter mixture just until a dough forms.
- Scoop 1 tbsp dough, flatten, add 1/2 tsp filling in the center, seal, and roll into a ball. Place 2 inches apart on a parchment lined sheet and flatten slightly.
- Bake at 350°F (175°C) for 11 to 13 minutes until edges are set. Cool 5 minutes, then whisk the glaze ingredients and drizzle over warm cookies. Serve warm.
Notes
If the dough feels sticky, chill it for ten minutes before shaping. The glaze sets quickly on the warm cookies, so drizzle as soon as they come out of the oven for the best texture.
