Ingredients
  

  • 1 cup (2 sticks) unsalted butter
  • 1 cup granulated sugar, plus 1/4 cup for rolling
  • 1/2 cup packed light brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon fine sea salt

Method
 

  1. Brown the butter in a light-colored saucepan over medium heat until golden and nutty, about 5 to 7 minutes. Pour into a bowl and cool to room temperature.
  2. Cream the cooled brown butter with 1 cup granulated sugar and brown sugar until fluffy, then beat in the egg and vanilla.
  3. Stir in the flour, baking soda, and salt just until no dry streaks remain.
  4. Press the dough into a disc, wrap tightly, and chill at least 1 hour.
  5. Preheat oven to 350°F (175°C). Scoop rounded tablespoons of dough, roll in the extra sugar, and bake on parchment-lined sheets for 10 to 12 minutes until edges are set. Cool on the sheet 5 minutes, then transfer to a rack.

Notes

Chilling time is not included in the prep total. For the chewiest centers, pull the cookies when the tops are still pale and puffy; they will settle as they cool.
