- Beat butter and 1 ¼ cups sugar on medium speed until pale and fluffy, about 2 minutes.
- Add egg, vanilla, and cherry extract. Beat on low speed just until combined, about 30 seconds.
- Fold in flour, baking powder, and salt by hand. Stir in cherries until evenly distributed. Do not overmix.
- Preheat oven to 350°F. Roll dough into 1 ½ tablespoon balls, coat in reserved sugar, and place 2 inches apart on lined baking sheets. Bake one sheet at a time for 10 to 12 minutes, until edges are set and tops are crackly.
- Cool cookies on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
Drain and dry the cherries really well to keep the dough from turning pink and sticky. If your kitchen is warm and the dough feels too soft to handle, pop it in the fridge for 10 minutes before scooping.
