Cheesy Taco Soup Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 (10 oz) can diced tomatoes with green chiles
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 2 cups chicken broth
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar
  • Salt and black pepper, to taste

Method
 

  1. In a large pot over medium-high heat, cook the ground beef until no longer pink, about 6 to 8 minutes. Add the onion and cook 3 minutes, then stir in the garlic and taco seasoning and cook 1 minute.
  2. Add the tomatoes with green chiles, black beans, corn, and chicken broth. Bring to a boil, then reduce heat and simmer for 10 minutes.
  3. Lower the heat to low, add the cream cheese and cheddar, and stir until completely melted, about 2 to 3 minutes. Season with salt and pepper.
  4. Ladle into bowls and top with extra cheese and desired toppings. Serve hot.

Notes

For the creamiest soup, use full-fat cream cheese and shred the cheddar from a block rather than using pre-shredded. The soup thickens as it sits; thin leftovers with a little broth when reheating.
