Cheesy Taco Potato Casserole Recipe

Ingredients
  

  • 1 ½ lbs russet potatoes, thinly sliced ¼ inch thick
  • 1 tbsp vegetable oil
  • 1 lb ground beef (85% lean)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup salsa
  • 2 cups shredded cheddar cheese
  • Salt and black pepper

Method
 

  1. Preheat oven to 400°F. Heat oil in a large oven-safe skillet over medium-high. Add beef and onion; cook 5 minutes until browned. Drain fat.
  2. Stir in garlic, taco seasoning, and a pinch of salt. Add salsa, bring to a simmer, and cook 2 minutes.
  3. Remove skillet from heat. Arrange sliced potatoes in a single overlapping layer over the beef. Sprinkle lightly with salt.
  4. Cover tightly with foil and bake 35 minutes.
  5. Remove foil, sprinkle cheese evenly over potatoes, and bake uncovered 10 to 15 minutes until cheese is bubbly and golden in spots.
  6. Let the casserole rest 5 minutes. Top with sour cream and cilantro, then serve from the skillet.

Notes

If you only have a baking dish, brown the beef in a regular pan and layer everything into a greased 9×13 dish before baking. The 5-minute rest after baking makes a real difference in how neatly the casserole portions. Use hot salsa or add a chopped jalapeño to the beef if your crowd likes spice.
