Cheesy Taco Pasta Recipe

Ingredients
  

  • 1 tbsp neutral oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground beef
  • 2 tbsp taco seasoning
  • 1 (14.5 oz) can diced tomatoes
  • 2 cups beef broth
  • 2 cups dried pasta shells
  • 2 cups shredded sharp cheddar cheese
  • Optional toppings: diced avocado, sour cream, fresh cilantro, pickled jalapeƱos, crushed tortilla chips

Method
 

  1. Heat oil in a large pot over medium-high heat. Cook onion 3 minutes, add garlic 30 seconds, then brown the beef for 5 to 7 minutes. Drain excess fat, stir in taco seasoning, and cook 1 minute.
  2. Add tomatoes with their juices, beef broth, and pasta. Bring to a boil, then cover and simmer over medium-low heat for 10 to 12 minutes, stirring occasionally, until pasta is tender.
  3. Remove from heat and stir in the cheddar a handful at a time until fully melted and smooth.
  4. Spoon into bowls and finish with your choice of toppings right away.

Notes

For a creamier sauce, stir in 2 tablespoons of room-temperature cream cheese along with the cheddar. Leftovers will thicken overnight, so loosen them with a splash of broth when reheating.
