- Heat oil in a large pot over medium-high heat. Cook onion 3 minutes, add garlic 30 seconds, then brown the beef for 5 to 7 minutes. Drain excess fat, stir in taco seasoning, and cook 1 minute.
- Add tomatoes with their juices, beef broth, and pasta. Bring to a boil, then cover and simmer over medium-low heat for 10 to 12 minutes, stirring occasionally, until pasta is tender.
- Remove from heat and stir in the cheddar a handful at a time until fully melted and smooth.
- Spoon into bowls and finish with your choice of toppings right away.
Notes
For a creamier sauce, stir in 2 tablespoons of room-temperature cream cheese along with the cheddar. Leftovers will thicken overnight, so loosen them with a splash of broth when reheating.
