Cheesy Stuffed Poblano Peppers Recipe

Ingredients
  

  • 4 large poblano peppers
  • 1 lb ground beef
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup cooked rice
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • ½ cup tomato sauce
  • 1½ cups shredded cheese
  • Sour cream, fresh cilantro, and lime wedges for serving

Method
 

  1. Broil halved and seeded poblanos cut-side down for 5 to 7 minutes, until blistered.
  2. Brown the beef and onion in a skillet, then stir in garlic, cumin, chili powder, salt, and pepper. Add rice, black beans, corn, and tomato sauce; simmer 3 minutes.
  3. Arrange roasted peppers in a baking dish, cut-side up, and spoon the filling into each half.
  4. Top with cheese and bake at 375°F (190°C) for 20 minutes, until melted and bubbly.
  5. Cool 5 minutes, then garnish with sour cream, cilantro, and lime juice. Serve warm.

Notes

If you can find poblanos with a bit of a curve, they cradle the filling better. The peppers will soften a little more as they sit, so for the best texture, serve them right away.
