- Mix the cream cheese, mozzarella, Parmesan, garlic, 1/4 tsp salt, and pepper until smooth, then fold in the spinach.
- Butterfly each chicken breast, pound to 1/4-inch thickness, spread with filling, roll tightly, and secure with toothpicks. Season outside with remaining salt, pepper, and Italian seasoning.
- Heat olive oil in an oven-safe skillet over medium-high heat and sear the roll-ups for about 2 minutes per side until golden all over.
- Preheat oven to 400°F (200°C). Transfer the skillet to the oven and bake 18 to 22 minutes, until the chicken reaches 165°F internally.
- Rest 5 minutes, remove toothpicks, slice into rounds, and serve with pan juices.
Notes
If you do not have an oven-safe skillet, sear in any pan then move the roll-ups to a baking dish before baking. The rest time is built into the total time; skip it only if you are in a real rush, but the slices stay neater with the short pause.
