- Preheat oven to 375°F. In a large oven-safe skillet over medium-high, heat oil and brown beef with onion, salt, and pepper, about 6–8 minutes. Drain excess fat.
- Add bell peppers and garlic; cook until softened, 4–5 minutes.
- Stir in rice, tomatoes with juices, broth, and Italian seasoning, scraping any browned bits from the pan.
- Bring to a boil, then reduce heat to low. Cover and simmer until rice is tender, 10–12 minutes, stirring once.
- Remove from heat, top with cheese, and broil 2–4 minutes until bubbly and golden. Let rest 5 minutes before serving.
Notes
If your skillet isn’t oven-safe, transfer the filling to a greased 9x13 baking dish before topping with cheese and broiling. The casserole tastes even better the next day; the rice absorbs more flavour overnight.
