Cheesy Mexican Tater Tot Casserole Recipe

Ingredients
  

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup frozen corn kernels
  • 1 (4 oz) can diced green chiles
  • 1 cup red enchilada sauce
  • 1/2 cup sour cream
  • 2 cups shredded Mexican blend cheese, divided
  • 1 (28 oz) bag frozen tater tots
  • Salt and black pepper
  • Chopped cilantro and diced tomatoes, for topping

Method
 

  1. Preheat oven to 400°F (200°C). In a large skillet over medium-high heat, cook beef, onion, and a pinch of salt until browned, 6 to 8 minutes.
  2. Stir in garlic and taco seasoning, cook 1 minute, then remove from heat. Mix in black beans, corn, chiles, enchilada sauce, sour cream, and 1 cup cheese until combined.
  3. Spread the mixture into a greased 9x13 inch dish. Sprinkle with 1/2 cup cheese, then arrange frozen tater tots in a single layer on top.
  4. Bake for 30 to 35 minutes until bubbly and golden. If needed, broil 2 minutes for extra color.
  5. Top with remaining 1/2 cup cheese, broil 1 minute to melt, then let cool 5 minutes. Sprinkle with cilantro and tomatoes and serve hot.

Notes

Let the casserole sit for a few minutes out of the oven before cutting so the filling holds together. If your tater tots are very large or thick, you may need an extra 5 to 8 minutes in the oven; look for deep golden color and bubbling edges as your guide.
