- Preheat oven to 400°F (200°C). In a large skillet over medium-high heat, cook beef, onion, and a pinch of salt until browned, 6 to 8 minutes.
- Stir in garlic and taco seasoning, cook 1 minute, then remove from heat. Mix in black beans, corn, chiles, enchilada sauce, sour cream, and 1 cup cheese until combined.
- Spread the mixture into a greased 9x13 inch dish. Sprinkle with 1/2 cup cheese, then arrange frozen tater tots in a single layer on top.
- Bake for 30 to 35 minutes until bubbly and golden. If needed, broil 2 minutes for extra color.
- Top with remaining 1/2 cup cheese, broil 1 minute to melt, then let cool 5 minutes. Sprinkle with cilantro and tomatoes and serve hot.
Notes
Let the casserole sit for a few minutes out of the oven before cutting so the filling holds together. If your tater tots are very large or thick, you may need an extra 5 to 8 minutes in the oven; look for deep golden color and bubbling edges as your guide.
