- Heat the oven to 375°F. In a skillet over medium-high heat, cook the onion in oil for 3 minutes. Brown the beef for 5 to 6 minutes, then add the garlic and taco seasoning. Stir in the beans, corn, and diced tomatoes with green chiles. Simmer for 2 to 3 minutes and remove from heat.
- In a small bowl, whisk the salsa with the water.
- Spread 1/2 cup of the salsa mixture in a 9x13-inch dish. Layer 4 tortillas, half the beef mixture, and 1 cup cheese. Repeat with the remaining tortillas, salsa mixture, and beef, then top with the remaining 2 cups cheese.
- Bake for about 30 minutes, until bubbly and golden. Let rest for 5 minutes, then top with cilantro and optional pickled jalapeños. Slice and serve.
Notes
If your salsa is very thin, you can skip the water and use it straight. Let the casserole rest after baking so the slices hold their shape. For extra browning, broil the top for a minute or two right before you take it out.
