Cheesy Make-Ahead Tater Tot Egg Casserole Recipe

Ingredients
  

  • 1 lb breakfast sausage, mild or spicy
  • 1 small yellow onion, diced
  • 1 small green bell pepper, diced
  • 12 large eggs
  • 1 cup whole milk
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 2 cups shredded sharp cheddar cheese
  • 1 (32-oz) bag frozen tater tots
  • Butter or nonstick spray

Method
 

  1. Cook sausage in a skillet over medium-high heat, breaking into crumbles, until no pink remains, about 6 to 8 minutes. Add onion and bell pepper and cook 3 to 4 minutes more. Drain fat and cool slightly.
  2. Whisk eggs, milk, salt, pepper, and garlic powder in a large bowl until pale and frothy. Stir in 1 1/2 cups of the cheddar.
  3. Butter a 9x13-inch dish. Layer half the frozen tater tots, then the sausage mixture, then the egg custard. Top with remaining tots and the last 1/2 cup cheddar. Press tots lightly into custard.
  4. Preheat oven to 350°F (175°C). Bake uncovered until eggs are set and top is golden, 50 to 60 minutes.
  5. Rest 5 to 10 minutes, then slice into squares and serve warm.

Notes

Assemble the casserole up to 12 hours ahead, cover, and refrigerate. Let it sit at room temperature for about 20 minutes before baking; you may need an extra 5 to 10 minutes in the oven if it goes in cold. For the crispiest top, do not thaw the tater tots.
