Method
- Preheat the oven to 400°F (200°C). Mix the cream cheese, cheddar, jalapeños, garlic powder, salt, and pepper in a bowl until smooth.
- Pound each chicken breast to ¼‑inch thickness. Spread the filling over the center, leaving a ½‑inch border, then roll up tightly and secure with toothpicks.
- Warm the oil in a large oven-safe skillet over medium-high heat. Sear the chicken rolls for 2 to 3 minutes per side until golden all over.
- Move the skillet to the oven and bake 20 to 25 minutes, until the chicken reaches 165°F (74°C). Let rest 5 minutes, remove toothpicks, slice, and serve.
Notes
Remove all toothpicks before slicing. A 5‑minute rest keeps the filling from running out and lets the juices redistribute through the meat. If your chicken breasts are on the larger side, they might need a few extra minutes in the oven.
