Ingredients
  

  • 4 boneless, skinless chicken breasts (6 to 8 oz each)
  • 4 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 1 to 2 fresh jalapeños, seeded and minced
  • 1 tsp garlic powder
  • ½ tsp fine sea salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil
  • Toothpicks

Method
 

  1. Preheat the oven to 400°F (200°C). Mix the cream cheese, cheddar, jalapeños, garlic powder, salt, and pepper in a bowl until smooth.
  2. Pound each chicken breast to ¼‑inch thickness. Spread the filling over the center, leaving a ½‑inch border, then roll up tightly and secure with toothpicks.
  3. Warm the oil in a large oven-safe skillet over medium-high heat. Sear the chicken rolls for 2 to 3 minutes per side until golden all over.
  4. Move the skillet to the oven and bake 20 to 25 minutes, until the chicken reaches 165°F (74°C). Let rest 5 minutes, remove toothpicks, slice, and serve.

Notes

Remove all toothpicks before slicing. A 5‑minute rest keeps the filling from running out and lets the juices redistribute through the meat. If your chicken breasts are on the larger side, they might need a few extra minutes in the oven.
