- Preheat oven to 375°F (190°C). Halve peppers lengthwise, remove seeds and ribs, and place cut side up in a 9x13 dish. Drizzle with olive oil, season with salt and pepper, and bake 10 minutes.
- In a skillet over medium-high heat, brown the sausage, breaking it apart, 6 to 8 minutes. Add onion and garlic and cook until onion is translucent, about 3 minutes. Stir in oregano.
- In a bowl, mix the sausage mixture, cooked rice, marinara sauce, and half the mozzarella. Taste and adjust salt and pepper.
- Spoon filling into the par-baked peppers, pressing lightly. Top with remaining mozzarella.
- Bake until cheese is melted and golden, 20 to 25 minutes. Let rest 5 minutes, garnish with fresh herbs, and serve with extra marinara.
Notes
If your peppers are especially large, you may have a little extra filling. Spoon it into a small ramekin and bake it alongside the peppers. Leftover filling also works well spooned over pasta the next day.
