Method
- Boil halved and seeded peppers in salted water for 3 to 4 minutes until tender-crisp, then drain cut side down. Preheat oven to 375°F (190°C).
- Brown ground beef in olive oil with salt and pepper over medium-high heat for 6 to 8 minutes. Transfer beef out, then cook onion and garlic in the same pan until softened.
- Return beef to skillet, stir in rice, tomato sauce, Worcestershire, and Italian seasoning. Simmer for 2 to 3 minutes until heated through and flavors combine.
- Arrange peppers in a baking dish, spoon filling into each half, and pour 1/4 cup water into the dish around the peppers.
- Cover with foil and bake 20 minutes. Uncover, top with mozzarella, and bake 10 to 15 minutes more until cheese is melted and edges are golden. Broil briefly if you want a browned top. Garnish with parsley and serve hot.
Notes
If your bell peppers are particularly large, you might have a little leftover filling, which is great spooned over toast or added to a lunch wrap. Leftovers reheat beautifully and the cheese remelts well in the oven or microwave.
