Cheesy Ground Beef and Rice Casserole Recipe

Ingredients
  

  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 lb ground beef
  • 1 cup long-grain white rice
  • 2 cups beef broth
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 2 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried oregano
  • 1 1/2 cups shredded sharp cheddar cheese

Method
 

  1. Preheat oven to 375°F (190°C). In a large oven-safe skillet, heat oil and cook onion 3 minutes. Add garlic and bell pepper, cook 1 minute. Brown ground beef, breaking it up, 5 to 7 minutes. Drain excess fat.
  2. Stir in rice and toast 1 to 2 minutes. Add broth, diced tomatoes, tomato paste, Worcestershire, salt, pepper, and oregano. Scrape bottom, bring to a boil.
  3. Reduce heat, cover, and simmer 5 minutes. Transfer covered skillet to oven and bake 20 to 25 minutes until rice is tender.
  4. Uncover, sprinkle cheese on top, and bake uncovered 8 to 10 minutes until melted and bubbly.
  5. Rest 5 minutes, then scoop and serve hot.

Notes

If you do not have an oven-safe skillet, transfer the beef and rice mixture to a lightly greased 9×13 baking dish before the covered bake. The casserole will stay warm on the table for a while, making it great for family dinners.
