- Melt 2 tbsp butter in a large nonstick skillet over medium-high heat. Add the chicken, salt, and pepper, and cook 3 minutes per side until golden and cooked through.
- Push chicken aside, add the remaining 1 tbsp butter and garlic, and stir 30 seconds off the heat. Mix garlic butter with chicken.
- Remove pan from heat, scatter both cheeses over the chicken, and stir until melted and coating the meat, about 1 minute.
- Spoon the filling onto tortillas, fold in the sides, roll up tightly, and set aside.
- Wipe the skillet, add a small pat of butter over medium heat, and toast the wraps seam-side down for 2 to 3 minutes per side until golden and crisp. Slice in half and serve warm.
Notes
If the tortillas are browning too fast but the cheese isn't fully melted, lower the heat and cover the pan for the last minute of toasting. Any leftover filling can be spooned over rice or pasta the next day.
