Ingredients

  • 1 medium green cabbage (about 2 lbs), shredded
  • 2 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 2 cups whole milk, warmed
  • 1 ½ cups shredded sharp cheddar cheese, divided
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp dry mustard powder (optional)
  • ½ cup panko breadcrumbs
  • 1 tbsp unsalted butter, melted
  • Fresh parsley, for garnish

Method

  1. Melt 2 tbsp butter in a saucepan over medium heat. Cook onion until soft, 5 minutes. Stir in garlic for 30 seconds. Sprinkle flour over top and stir 1 minute.
  2. Slowly whisk in warm milk and cook, stirring, until thickened, 3–4 minutes. Remove from heat and stir in 1 cup cheddar, salt, pepper, and mustard powder.
  3. Toss shredded cabbage with the cheese sauce in a large bowl until evenly coated.
  4. Transfer to a 9x13-inch baking dish. Mix panko, remaining ½ cup cheddar, and melted butter; scatter over the top.
  5. Bake at 375°F (190°C) for 30–35 minutes until golden and bubbling. Let rest 5 minutes, garnish with parsley, and serve.

Notes

Resting the baked casserole for a few minutes makes it easier to serve and lets the sauce thicken. If you like extra crunch, pop it under the broiler for the final two minutes, but keep a close eye so the breadcrumbs don’t scorch.
