Cheesy Brussels Sprouts Recipe

Ingredients
  

  • 1 ½ lb Brussels sprouts, halved
  • 1 tbsp olive oil
  • ½ tsp salt, plus more to taste
  • ¼ tsp black pepper
  • 2 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 1 ¼ cups whole milk
  • 1 ¾ cups shredded sharp cheddar cheese, divided
  • ¼ cup grated Parmesan cheese
  • Pinch of ground nutmeg (optional)
  • ½ cup panko breadcrumbs
  • 1 tbsp melted unsalted butter or olive oil
  • Chopped fresh parsley, for garnish (optional)

Method
 

  1. Preheat oven to 400°F. Sauté sprouts in oil over medium-high, cut side down, with salt and pepper until browned, 4 minutes. Stir and cook 3-4 minutes more until bright green and tender. Transfer to plate.
  2. In same skillet, melt butter, whisk in flour and cook 1 minute. Slowly whisk in milk, simmer 2 minutes until thick. Off heat, stir in 1½ cups cheddar, all the Parmesan, nutmeg, salt, and pepper until smooth.
  3. Toss sprouts with sauce. Transfer to greased 8x8-inch dish if skillet isn’t oven-safe. Top with panko, remaining ¼ cup cheddar, and drizzle with melted butter.
  4. Bake 15-18 minutes until bubbly and golden. Broil last 1-2 minutes if desired.
  5. Let cool a few minutes, scoop into bowls, garnish with parsley, and serve hot.

Notes

You can assemble the unbaked dish up to a day ahead and refrigerate. Bake from cold, adding 5 to 10 minutes to the bake time. The breadcrumb topping is best right out of the oven but still tasty reheated in the oven to re-crisp.
