- Pound the chicken breasts to 1/4‑inch thickness and season both sides with salt, pepper, and garlic powder.
- Mix the cream cheese with half the mozzarella. Spread it on the chicken, leaving a border, then lay the asparagus spears crosswise near one short end.
- Roll each breast up tightly, secure with toothpicks, and season the outside with paprika. Sear in an oven-safe skillet with olive oil over medium‑high for 2 to 3 minutes per side until golden.
- Transfer the skillet to a 400°F (200°C) oven and bake for 20 to 25 minutes, until the internal temperature reaches 165°F (74°C).
- Let the chicken rest for 5 minutes, remove the toothpicks, slice into rounds, and serve hot.
Notes
If your asparagus is thicker than a pencil, blanch the spears for 1 minute and dry them well before stuffing. Use an instant-read thermometer to check doneness without cutting into the roll. Lift the chicken out of the skillet with a spatula so the toothpicks don’t catch.
