- Preheat oven to 375°F (190°C). Cook diced bacon in an oven-safe skillet over medium heat until crisp, 6-8 minutes. Remove bacon and leave 2 tbsp fat in the pan.
- Add sprouts cut-side down and onion. Cook without moving 3-4 minutes until golden, then stir and cook 2 minutes more. Add garlic and cook 30 seconds.
- Sprinkle flour over the vegetables, stir 1 minute. Slowly pour in milk and cream, add salt, pepper, nutmeg. Simmer until thickened, 3-4 minutes, then remove from heat.
- Stir half the bacon and half the cheese into the sprouts. Top with remaining cheese and fried onions.
- Bake uncovered 20-25 minutes until edges bubble and topping is golden. Let rest 5 minutes, then spoon onto plates and serve hot.
Notes
If your skillet is not oven-safe, transfer the mixture to a greased 2-quart baking dish before topping with cheese and onions. A 5-minute rest after baking keeps the sauce from running when you serve it. For the crunchiest topping, add the fried onions in the last 10 minutes of baking if you notice them browning too fast.
