Method
- Beat the cream cheese, 2 tbsp sugar, and 1/4 tsp vanilla until smooth. Shape into a log, wrap, and freeze 20 minutes.
- Cream the butter, brown sugar, and 1/4 cup granulated sugar until light and fluffy, about 2 minutes. Beat in the egg and 1 tsp vanilla.
- Stir in the flour, baking soda, and salt just until combined. Fold in the chocolate chips. Refrigerate the dough 30 minutes.
- Flatten a tablespoon of dough, place a teaspoon of cold cheesecake filling in the center, top with more dough, and seal. Roll into a ball. Repeat for 12 cookies.
- Preheat the oven to 350°F (180°C). Place balls on parchment-lined sheets 2 inches apart. Bake 12 to 14 minutes, until edges are golden and centers look soft.
- Cool on the baking sheet for 5 minutes, then transfer to a wire rack. Serve warm.
Notes
The dough and filling need at least 30 minutes of chilling before shaping. You can make both a day ahead and keep them covered in the fridge. If the filling softens while you work, pop the bowl back in the freezer for 10 minutes.
