Cheeseburger Soup Recipe

Ingredients
  

  • 2 tbsp unsalted butter
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 lb ground beef (80/20)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp all-purpose flour
  • 4 cups beef broth
  • 2 cups russet potatoes, peeled and diced into 1/2-inch cubes
  • 1 cup heavy cream
  • 2 cups shredded sharp cheddar cheese
  • 2 tbsp ketchup
  • 1 tsp yellow mustard

Method
 

  1. Melt butter in a large pot over medium-high heat. Add beef, onion, salt, and pepper. Cook until beef is browned and onion is soft, about 6-8 minutes. Stir in garlic and cook 1 minute.
  2. Sprinkle flour over the meat and stir 1 minute. Slowly pour in broth while stirring, scraping up browned bits.
  3. Add potatoes, reduce heat to medium-low, cover, and simmer 15-20 minutes until potatoes are fork-tender.
  4. Remove pot from heat. Stir in cream, ketchup, and mustard. Add cheese a handful at a time, stirring until smooth. Ladle into bowls and serve hot.

Notes

For an over-the-top burger vibe, top each bowl with crumbled bacon, a drizzle of ketchup, and a few dill pickle chips.
