Method
- Melt butter in a large pot over medium-high heat. Add beef, onion, salt, and pepper. Cook until beef is browned and onion is soft, about 6-8 minutes. Stir in garlic and cook 1 minute.
- Sprinkle flour over the meat and stir 1 minute. Slowly pour in broth while stirring, scraping up browned bits.
- Add potatoes, reduce heat to medium-low, cover, and simmer 15-20 minutes until potatoes are fork-tender.
- Remove pot from heat. Stir in cream, ketchup, and mustard. Add cheese a handful at a time, stirring until smooth. Ladle into bowls and serve hot.
Notes
For an over-the-top burger vibe, top each bowl with crumbled bacon, a drizzle of ketchup, and a few dill pickle chips.
