- Brown the beef and onion in a skillet over medium-high heat, breaking it into small crumbles, about 5 minutes. Drain fat, then stir in Worcestershire, garlic powder, onion powder, salt, and pepper.
- Mix ketchup, mustard, mayonnaise, and chopped pickles in a small bowl until smooth.
- Spread 1 tbsp sauce over each tortilla. Place 2 cheese slices on half, top with a quarter of the beef, add 2 more cheese slices, and fold.
- Melt butter in the skillet over medium heat. Cook each quesadilla until deep golden and crisp, 3-4 minutes per side, pressing gently with a spatula.
- Rest 1 minute on a cutting board, slice into wedges, and serve hot with extra sauce.
Notes
A cast-iron skillet gives the deepest golden crust. If you like heat, add diced jalapeƱos inside or a few shakes of hot sauce to the burger sauce.
