- In a large skillet over medium-high heat, brown the ground beef until no pink remains, about 5 to 6 minutes. Drain excess fat. Add onion and cook 2 to 3 minutes, then garlic for 30 seconds.
- Stir in ketchup, mustard, Worcestershire sauce, salt, and pepper. Remove from heat and cool for 5 minutes.
- Lay an egg roll wrapper with a corner pointing toward you. Spoon about 2 tbsp beef mixture across the center, add cheese and pickles, then fold and roll tightly, sealing the top corner with water.
- Heat 1 inch of oil in a skillet to 350°F (175°C). Fry egg rolls in batches for 2 to 3 minutes per side until deep golden. Drain on paper towels.
- Serve hot with dipping sauce of your choice.
Notes
Let the filling cool for a full 5 minutes before rolling, or the wrappers will tear. You can prep the filling a day ahead and store it in the fridge, then roll and fry when ready.
