Ingredients

  • 1 lb ground beef (80/20)
  • ½ cup finely chopped onion
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1 tsp Worcestershire sauce
  • 4 slices American cheese, cut into thin strips
  • ¼ cup chopped dill pickle rounds
  • 8 egg roll wrappers
  • Vegetable oil, for frying
  • Salt and black pepper

Method

  1. In a large skillet over medium-high heat, brown the ground beef until no pink remains, about 5 to 6 minutes. Drain excess fat. Add onion and cook 2 to 3 minutes, then garlic for 30 seconds.
  2. Stir in ketchup, mustard, Worcestershire sauce, salt, and pepper. Remove from heat and cool for 5 minutes.
  3. Lay an egg roll wrapper with a corner pointing toward you. Spoon about 2 tbsp beef mixture across the center, add cheese and pickles, then fold and roll tightly, sealing the top corner with water.
  4. Heat 1 inch of oil in a skillet to 350°F (175°C). Fry egg rolls in batches for 2 to 3 minutes per side until deep golden. Drain on paper towels.
  5. Serve hot with dipping sauce of your choice.

Notes

Let the filling cool for a full 5 minutes before rolling, or the wrappers will tear. You can prep the filling a day ahead and store it in the fridge, then roll and fry when ready.
