Ingredients
  

  • 2 boneless, skinless chicken breasts (about 8 oz each)
  • 4 oz cream cheese, softened
  • ½ cup shredded low-moisture mozzarella
  • 1 clove garlic, minced
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Method
 

  1. In a bowl, combine cream cheese, mozzarella, garlic, oregano, ¼ teaspoon salt, and ¼ teaspoon pepper. Stir until smooth.
  2. Cut a deep pocket in each chicken breast. Divide the cheese mixture between the pockets and press closed. Season the outside with the remaining salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken for about 3 minutes per side until golden.
  4. Transfer skillet to a 400°F (200°C) oven and bake 12 to 15 minutes, until chicken reaches 165°F (74°C). Rest 2 minutes, then serve.

Notes

If the chicken breasts are large (over 10 oz each), you might need up to 18 minutes in the oven, so always go by the thermometer reading. The cheese may ooze slightly from the opening, but that’s part of the appeal rather than a flaw.
