Cheddar Bay Biscuit Seafood Pot Pie Recipe

Ingredients
  

  • 2 tbsp butter
  • 1 medium yellow onion, finely chopped
  • 2 celery stalks, diced
  • 1 medium carrot, diced
  • 2 garlic cloves, minced
  • 3 tbsp all-purpose flour
  • 2 cups seafood stock or clam juice
  • ½ cup heavy cream
  • 1 tsp Old Bay seasoning
  • ½ tsp fine sea salt
  • ¼ tsp black pepper
  • 1 lb mixed seafood (shrimp, scallops, crab)
  • 1 cup frozen peas
  • 4 tbsp cold unsalted butter, cubed
  • 1 cup shredded sharp cheddar cheese
  • 1½ cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt (for biscuit dough)
  • ½ tsp garlic powder (for biscuit dough)
  • ⅔ cup whole milk
  • 2 tbsp melted butter (for brushing)
  • ½ tsp garlic powder (for garlic butter)
  • 1 tsp finely chopped fresh parsley

Method
 

  1. Preheat oven to 400°F (200°C). Melt 2 tbsp butter in a 10-inch oven-safe skillet over medium heat. Cook onion, celery, and carrot for 5 to 6 minutes until soft. Add garlic and cook 1 minute.
  2. Sprinkle 3 tbsp flour over vegetables, stir 1 minute. Slowly whisk in warm seafood stock and heavy cream. Add Old Bay. Simmer 3 to 4 minutes until thickened. Season with salt and pepper. Fold in seafood and peas, cook 2 to 3 minutes until shrimp are pink. Remove from heat.
  3. In a bowl, whisk together 1½ cups flour, baking powder, ½ tsp salt, and ½ tsp garlic powder. Cut in the 4 tbsp cold butter until pea-sized. Stir in cheddar. Add milk, stir just until combined.
  4. Drop 8 mounds of biscuit dough over the seafood filling.
  5. Bake 20 to 25 minutes until biscuits are golden and filling is bubbly.
  6. Combine 2 tbsp melted butter with ½ tsp garlic powder, brush over hot biscuits, and sprinkle with parsley. Serve immediately.

Notes

If you’d like to assemble this ahead, prepare the filling and refrigerate it separately from the unbaked biscuit dough. When ready to bake, reheat the filling on the stove until hot, top with the dough, and bake as directed, adding 3 to 5 extra minutes.
