- Melt 3 tbsp butter in a large skillet over medium heat. Cook onion, celery, carrots with 1/2 tsp salt and 1/4 tsp pepper for 5 to 6 minutes. Add garlic and cook 30 seconds.
- Sprinkle 1/4 cup flour over vegetables, stir 1 minute. Whisk in 2 cups broth and 1 cup milk. Simmer until thickened, about 3 to 4 minutes. Season with remaining salt, pepper, and thyme.
- Remove from heat, stir in chicken and peas. Pour into a 9x13-inch baking dish or 10-inch cast iron skillet.
- Preheat oven to 400°F. Whisk 2 cups flour, baking powder, 1 tsp garlic powder, and 1/2 tsp salt. Cut in cold butter until crumbly, fold in cheese, then stir in 3/4 cup milk just until combined.
- Drop 1/4-cup scoops of dough over the filling. Bake 20 to 25 minutes until biscuits are golden and filling bubbles.
- Mix melted butter, 1/4 tsp garlic powder, and parsley. Brush over hot biscuits. Let rest 5 minutes before serving.
Notes
Letting the pot pie sit for 5 minutes after baking helps the filling set up so it isn't too thin. If the sauce looks a little loose before adding the biscuits, simmer it a minute longer or sprinkle in an extra tablespoon of flour.
