Ingredients
  

  • 1 box (11.36 oz) Cheddar Bay biscuit mix
  • 1 cup sharp cheddar cheese, shredded
  • 6 tbsp unsalted butter, divided
  • 1/2 cup cold water
  • 2 cups cooked shredded chicken
  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup frozen mixed vegetables
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper

Method
 

  1. Preheat oven to 400°F (200°C). Grease a 9x13-inch baking dish. In a large bowl, stir together chicken, soup, sour cream, vegetables, garlic powder, onion powder, salt, and pepper. Spread into dish.
  2. In a medium bowl, combine biscuit mix, cheese, cold water, and 4 tbsp melted butter until a sticky dough forms.
  3. Drop spoonfuls of dough over the filling.
  4. Bake 22–25 minutes until biscuits are golden and filling is bubbly.
  5. Stir remaining 2 tbsp melted butter with the reserved seasoning packet; brush over hot biscuits and let stand 5 minutes before serving.

Notes

Use any frozen vegetable blend you like; a mix with green beans or cauliflower works just as well. If the biscuit topping browns too quickly, tent the dish loosely with foil for the last few minutes. Resting time is not included in the cook time.
