Char-Grilled Cabbage Steaks Recipe

Ingredients
  

  • 1 large green cabbage (about 2 1/2 lb)
  • 3 tbsp olive oil, divided
  • 1 tsp kosher salt, divided
  • 1/2 tsp freshly ground black pepper, divided
  • 2 tbsp fresh lemon juice
  • 1 tbsp Dijon mustard
  • 1 small garlic clove, minced
  • 2 tbsp finely chopped fresh parsley
  • 1 tbsp finely chopped fresh dill

Method
 

  1. Cut the cabbage into 3/4-inch thick steaks, keeping the core intact so they hold together.
  2. Whisk together 2 tbsp olive oil, lemon juice, mustard, garlic, parsley, dill, 1/4 tsp salt, and 1/4 tsp pepper.
  3. Brush the cabbage steaks with the remaining 1 tbsp olive oil, then season with the remaining 3/4 tsp salt and 1/4 tsp pepper.
  4. Grill over medium-high (400°F) for about 5 minutes per side, until the edges are charred and a knife tip slides into the core with just a little resistance.
  5. Transfer to a platter, spoon the dressing over the steaks while warm, and serve immediately.

Notes

If the core of your cabbage is very thick, trim a thin slice from the bottom to help it stand flat on the grill, but do not remove the core entirely.
