- Whisk flour, 1 1/2 tsp cinnamon, cardamom, ginger, cloves, pepper, baking powder, and salt in a bowl.
- Beat butter and 3/4 cup sugar until fluffy. Beat in egg and vanilla. Stir in dry ingredients until just combined.
- Cover and chill dough 30 minutes to 1 hour. Mix the 2 tbsp sugar with a pinch of cinnamon on a plate.
- Preheat oven to 350°F. Scoop dough into 1 tbsp balls, roll in cinnamon sugar, and place 2 inches apart on parchment-lined baking sheets.
- Bake 10 to 12 minutes until edges are set and lightly golden. Let rest on the hot sheet for 2 minutes, then transfer to a rack.
- Serve warm or cool completely.
Notes
Chill time is hands-off but essential for thick cookies. Dough can be made a day ahead and refrigerated; let sit at room temp for 10 minutes before scooping. For a stronger spice punch, increase the cardamom and pepper slightly.
