Method
- Soak the cedar plank in water for at least 1 hour. Whisk together maple syrup, Dijon, soy sauce, garlic, lemon zest and juice, ½ tsp salt, and ¼ tsp pepper.
- Heat grill to medium-high (400°F). Pat salmon dry, season with salt and pepper, and let rest 10 minutes.
- Place soaked plank on grill, close lid, and heat until smoking, about 3 minutes. Arrange salmon skin-side down on the plank, close lid, and grill 8 minutes.
- Brush the glaze over the salmon, close lid, and grill until fish flakes and reaches 135°F, 2 to 3 minutes more.
- Remove plank from grill, slide a spatula between skin and flesh to lift fillets onto a platter. Drizzle any remaining glaze on top and serve.
Notes
The soaking time for the plank is not included in the prep time; plan accordingly. If you’re cooking indoors, the same recipe works in a 400°F oven on a soaked plank placed on a rimmed baking sheet; bake 12 to 15 minutes total, glazing the last 3.
